Tomorrow is valve time for "next week".
Valve probably do some kind of TF2 related offer tomorrow as well for those few who still don't have the game.

My hopes are riding on the Engie update also hitting today (Thursday).

And watch thousands of people running Mac OS X in a virtual machine only to get said earbuds. I doubt they would add said earbuds...
Doubt it regarding the engineer update, Valve probably want to hype it up first... plus steam servers always melts at major TF2 updates. Adding a mac release on the same date is just a bad idea.
There will be updates shipped with the Mac release, probably mostly fixes. Someone in the TF2 team people was working hard on covering some last crash fixes (and asked some help from the community to provide crash dumps), probably so mac users won't stumble upon the same software problems. I'm looking forward to an update that makes me able to play TF2 for more than a hour in row before it crashes (it always seem to crash after two-four mapchanges for me).
